Akim was born in Germany and after finishing his professional education to gain a diploma as a hospitality expert, and completing his civil duty, he began his career in the hospitality industry at a 5* hotel. From there, he decided to focus on restaurant operations and in 2003 took up the position of Chef de Rang at the high profile Vineyard at Stockcross. With the desire to progress, Akim became Head Waiter within a year of his arrival and later became responsible for his department.
In 2004, when looking for a new challenge, Akim moved to Bath and became Restaurant Manager at The Royal Crescent Hotel, where he managed their fine dining establishment for two years. With the desire to broaden his knowledge, Akim then took on a role at a hospitality recruitment agency in Bath, assisting candidates in finding positions similar to those he had held himself. Although he enjoyed this experience, when he was approached to return to The Royal Crescent, it was a role that Akim did not want to turn down - taking on more responsibility, he returned with renewed enthusiasm.
In summer 2008 Akim was approached by another previous employer, Executive Head Chef John Campbell from The Vineyard at Stockcross, and asked to return to the prestigious hotel in Newbury. Taking on the role of Restaurant Manager, he ran the 2 Michelin star restaurant with passion and precision, which led the team to being awarded ‘Best Hotel-Restaurant', along with sixth place in the Top 100 Restaurants, at the National Restaurant Awards in 2009.
Akim joined The Bath Priory in October 2009.
